lemon sorbet

We’ve been making lemon sorbet this weekend. This batch looks a bit like snow cones and it is really good! Probably you could make popsicles with this recipe too and Scott has been seen adding tequila to a scoop of this sorbet in a glass for a tasty drink…

Lemon Sorbet
1 cup water
1/2 cup (or up to 1 cup) sugar (the less the better in my book but you do need it for creating small ice crystals in the sorbet)
1 cup fresh squeezed lemon juice from your lemon tree

Simmer the sugar and water until the sugar is dissolved. Cool, and add lemon juice. Place in a shallow pan in the freezer and stir it every once in a while to keep it from freezing into a block. Eventually you’ll have a slushy treat. Place in a container with a lid when it’s how you want it. Serve with a few mint or lemon balm leaves and enjoy!
