Today I was all inspired by yesterday’s cookbook and made some chicken broth, actually I started it last night in the crock pot. One chicken carcass from the day’s chicken meal, then added water and 1/4 vinegar to draw out all the minerals. Partway through the day I made some vegetable soup with the broth, and in the evening, I strained the rest of it into jars for the freezer. I cooled it in the fridge first and used widemouth jars with plenty of space at the top for possible expansion. Glad to have a flavorful base for all the autumn soups coming up!
