My Mom and I started our online cooking class today and it was really exciting! Our first week covered fundamentals of whole food cooking and we were treated to this week’s cooking video of how to make almond milk and three different fruit and vegetable smoothies.

Lukas can’t have nuts but we can always make almond milk for Scott. Part of what I like about this class too is the flexibility for ingredient substitution that there is. When she mentions using the almond milk in one of the smoothies, I know we can just as easily substitute the hemp milk we often use. I had never thought about using the green smoothie as a readymade afternoon snack to have waiting for when the 3pm snack cravings hit. I love the new twists on the familiar and the totally new ideas.

For my Mom, she enjoys the recipes themselves more than the philosophy or spirituality of eating a mostly plant based diet. Or at least she’s not saying anything about that. We’ll see what evolves! I totally recommended Heather’s classes to all who are interested in discovering a healthful, simple way of nourishing yourself and your family.
