kale chips!

don't forget to de-stem your kale...

A friend and I were recently discussing kale chips and their virtues, so I thought I’d mention them here. These things are amazing. They take kale, which is a really healthy tough leafy green and turns it into this crunchy sweet snack!

I like to make these with just olive oil and salt but you can also get more intense. Today I made them with a derivative of a recipe from my cooking class:

Take 1/4 hemp seeds, 1/3 c water, a couple Tablespoons of olive oil, a roasted red pepper or two (you could use sundried tomatoes instead or do both) add a teaspoon each of basil and oregano and some salt and pepper. Whrr in the blender. Cut up your kale and mix it with this sauce. Cook them in the oven at around 250 degrees, checking and turning every 15-30 minutes. This is a seriously cheesy tasting snack with no cheese. I’m not sure what is going on here but we ate them so fast there isn’t even a photo.

Alternatively you can put them in a 350 degree oven with just olive oil and salt and bake for 10-15 minutes. Some will be crunchy and some  little chewy. Love these kale chips!
